As the title asks: is it possible to watch spatial video that's within the Mac Virtual Display (i.e. on the Mac) on the Vision Pro? Also with the VisionOS 2.0 ultrawide display feature will it be able to expand panorama pictures from within Mac Virtual Display?

Don't understand the question. You want to watch spatial video on a 2D virtual display?
 
So I haven’t tried this, but I’m pretty comfortable saying anything coming from your MacBook is 2D.
The wrap around immersive effect of Panoramic photos is a feature of the Photos app on Vision Pro.
I don’t believe Apple would implement the Spatial capabilities into macOS just for the use case you describe.
 
No, you'd watch it thru the native visionOS Photos app. Mac (and AppleTV) output 2D 1080P (if recorded on iPhone).

I would like the 3D content to pop out of the 2D virtual display yes. Window management in VisionOS is non existent so I would prefer to stay in the Mac Virtual Display as much as possible instead of juggling multiple windows
