i watch a lot of YouTube and I prefer to leave the video zoomed out so it doesn’t get cut off. My question is will watching lots of videos like this cause burn in?

Burn in, if it were to occur, usually results from many hours of a static image being displayed on a screen at max brightness. In your use case, you do not have a static image, so if it were me...I wouldn't worry about burn in.
 
Curious, why would burn-in apply differently when it comes to regular vs zoomed in videos?

Because the sides of the screen where it’s black would get used less and the wear on those pixels would be different
