Regardless of what I use for the bezel complication (or don't use at all), any temperature 'range' over two digits won't be displayed.
I've been using Infograph for several years, and it doesn't have this issue because it wraps around the corner.

Yes, unfortunately our high temperature today is forecasted 101ºF

Looking at my watch and seeing the exact same thing. Says 75 lower left, 86 current temp (at 10:42 AM!), and then the 1.. in the lower right.

Gotta love Texas.

Seems like an easy UI fix, just don't have the semi-circle go down as far - you'd have room for one more digit.

And Texas whew... expect >30 days of the year at >100ºF, which means 10% of the days I look at my watch it will be like this! First world problems of course.
