Shortly after midnight, my time zone, I noticed the apple logo on my watch (it's on the charger), after the logo goes away I check the version to see if there was an update and it's 7.2, I didn't put the beta on this watch so I check the build number to see if they released 7.2, it build 18s5545f which is beta 1 from November. What the heck?
 
Took this shortly after the Apple logo disappeared and I when into the About screen. How the heck did an old beta of 7.2 get pushed to my Apple Watch? No one else had this happen?

Yeah, as a matter of fact I have a new iPhone and factory reset the Apple Watch when I set it up with the new iPhone about 2 weeks ago. I was beta testing iOS 14 of my older phone, but that was already on the general release for a while and the beta profiles removed back when iOS 14 was released. The strange thing was the Apple logo appearing at midnight like it rebooted and then I noticed it had a beta build on it.
