I went for my run this morning on watchOS8 for the first time, same distance and pace as I typically do 4-5 times a week, and the VO2Max was reported 4% higher than it did yesterday. Using the same S4 watch I have for a couple years now. I don't think that can be possible. Has anyone else noticed similar?
 
I saw that early in the WatchOS 8 betas. It offset a similar adjustment in the other direction a year ago when I started with the WatchOS 7 betas. I'm not sure why they adjusted their formula, but I assume it was something of the sort.
 
It's always possible they've tweaked something. I'd recommend looking at watch-generated VO2max in terms of trends rather than discrete values.

Remember it's an estimation not a calculation or measurment. While it may seem pedantic to emphasize the difference, we can't expect a huge degree of accuracy from using multiply indirect measurements to estimate something normally measured in a lab with a breathing apparatus.

Last year my VO2max readings were between 38 and 40. Since iOS 15 it’s between 44 and 47 🤔
 
I observed the same, it jumped two points to 60 after my first long run with the new version of WatchOS. I observed something similar with the last version.
