I thought watchOS updates would now be performed solely on the watch with watchOS 6. However, when I attempted to do this last night it still made me open my iPhone to accept the terms. I wouldn’t really call that independence if I still need to open my phone to complete an update. Has anyone else experienced this?

We've all experienced. Since day 1 the Apple Watch has required an iPhone. Apple never said the Watch is independent of the phone.
 
I got the same and ended up triggering it via the iPhone for my new S5.

True independence is first going to need more battery power for a variety of things including all day taking calls etc.

You are partially correct. However they Added watchOS OTA updates to watchOS 6 and independent app downloads via the App Store on the watch (which was heavily promoted on stage at wwdc). They are clearly moving toward greater watch independence. I’m just surprised that a terms agreement on the iPhone is the only hurdle standing between me downloading the update and installing it solely on the watch.
 
This year is step one - I hope next year true independence comes and you could have a watch without a phone. Curious if we could get to the point where a cell phone plan wouldnt require a phone and the could be the main device; hopefully for a smaller fee than a full cell phone bill since you’d probably use the data less overall.
 
This is what I am waiting for as well. I would love to only take my watch with me often and one could do calls with headphones. Fingers crossed for 2020
