WatchOS8, inaccurate clockdisplay

WatchOS8 seems to more frequently dim the display on the watch to save battery. When it does this it doesn't seem to update the clock at all, the display is still on and the clock is "frozen". So when I glance at my clock (without the display actually turns brighter) I see an old timestamp, sort of. I really needs to make sure the screen is "activated" to see the actual clock.
This has fooled my quite a few times since I've updated. Any way around this, it's really really annoying.

Did you try restarting your AW?

I was having the same issue and restarting watch sorted the issue
