I share a lot of screen captures with colleagues on other operating systems, so I end up having to add a file extension to each screen cap image that I do in OS X. I know that you can change the file format for screen caps from PNG to JPG, etc. but is there a way to have it automatically add a file extension to the end of the file name?

Just out of curiosity, why is it necessary to add extensions? Normally the extensions are just hidden (Finder > Preferences >> Advanced >>> Show all filename extensions)

They automatically have file extensions, otherwise the OS wouldn't know the format and how to handle it in the first way. By default, they are just hidden but that doesn't have any effect other than a cosmetic one. You can just go a head and share them however you want without manually "adding" a file extension.
