I want to start fresh with my iPhone 7 plus. Is there still a way I can keep my AW Health Data history? I just prefer a clean iPhone install don't want my years of crap always following new phones.

Although someone has posted to some 3ed party software that can 'strip' the Health data out of an iTunes backup using your encryption key.
 
What exxxviii said is what I did and it worked perfectly. Had a clean install on IOS and then used my backup and all my health data rings etc stayed but nothing else. I was shocked
 
i used Decipher Tools yesterday to clean up my buggy iPhone 6s that was having battery problems.

It takes your iTunes encrypted backup and saves only the stuff you will die without... like watch data, messages, photos, what have you. you customize the settings.
 
I used the Decipher tool from my 6s to 7Plus. Work flawlessly. Saved a year of health data but no other junk or battery issues.
