I've read of a way to highlight text on a page being viewed on Safari via bookmarklets, but I was wondering if there was any other way (without JB'ing it) to find text on Safari?
 
Yes. Go here on your iPhone and the instructions are there. There are also other useful things you can add such as scroll to end, display all images, translate to english (and other languages), etc.

No problem. I'm surprised not a lot of people knew about this. I believe this is back from the 2.X days. I don't even remember how I stumbled upon it but it was a great find and is pretty handy.
