I just noticed a new feature in 3.0 (i am pretty sure its new at least).
When you tap "Add to Home Screen" on a web app in Safari it now does 2 things very differently.
1. It takes a snapshot of the actual web app and uses it as a "start up screen", you know while it loads right after you tap it.
2. it does NOT open Safari anymore!! it is a little standalone SSB (Single Site Browser)! that is so, so very much better. I never used web apps due to how they were implemented. now if its a well designed app, you can hardly distinguish it from a native app.
3. (I lied, 3 new things). The Navigation bars are gone, so it appears more "native" like the image i attached (Which is the Transmission torrent web interface).
I may actually start using a few web apps now.
EDIT: Hmm, not all web apps do this.. maybe it is something that must be set in the app's code. anyway, still a change for the better.
