Does the latest version of Webkit incorporate the feature in Safari 4 where you can make a website into a mini-application? Also, why is it when I open up Webkit, the menu bar just says Safari? Thanks!

so, when I double click webkit on the dock, its opening safari 3 but replacing the rendering engine, is that correct?

Correct. If you have Safari 4 DP installed, clicking on the icon will load the WebKit nightly in the Safari shell. See screenshot: It inherits the version number from Safari and adds the WebKit release number:
