I bought my girlfriend a watch series 5 from tmobile for xmas. I have a watch and iphone from Verizon. She is telling me that she is getting messages from my contacts that are going to me and her. She set her watch up with her apple id (i saw her do it) and my apple id isnt associated with the tmobile account at all. Checked my iCloud account and its only showing my four devices. How the hell is it possible for her to get messages for me showing on her watch too? It also shows my exercise stuff too on her watch.

Sounds like a carrier issue? Maybe a trip to the Genius Bar might be warranted. Make a date night out of it, is my suggestion. (I use my Genius Bar appointments as excuses to visit the nice parts of my region!)
 
Has her number or Apple ID ever been associated with your account in any way? Have you two ever shared an account together? From what you described, it sounds like you have, as that is the only way I have read of this problem happening.

Activity notifications are local to the device. The message you can see on the watch, calling her Jeff, could be caused by a misheard "hey siri call Jeff" - "hey siri call me Jeff" (there are examples of "you can do it, big boy" or the like to be found on the net).

One thing to check would be in the health app, does her watch appear in in your list of devices? If so, you're "in sync" for some strange reason that warrants further investigation. If not, it points to the above being the case.
 
I can't see at all how this could possibly be a carrier issue.
One, the OP didn't buy the watch from his carrier, but hers.
Two, even if he did buy it from his carrier (which he didn't), there's no way for the carrier at their to associate an AppleID with a device (watch and phone LTE service, yes, but not an AppleID).

This has to be an AppleID issue. At least its solvable by completely wiping the watch and starting over. As to how it happened, I have to suspect someone accidentally entered the wrong AppleID information somewhere along the line or the OP's girlfriend has his AppleID in her phone (sharing App store account or something, perhaps?).
