Why is my greedy system robbing my precious gigs and how do I stop it??

Lots of things can totally bloat up your "System" storage that aren't really part of the system.

Click on the "Manage" button. Then choose "Review Files" on the right. This will give you a look at your largest folders. If any large folders are stored in your /Library folder, it might be your culprit. There are programs out there known to save backup files somewhere in your /Library folder. You might also have lots of iOS backups that you can delete.

If you do Time Machine backups, try doing a backup to see if that block of storage goes down. Locally stored changes to your volume for Time Machine can also eat up a chunk of space that gets released when you make a backup or you run out of space for other things.

Certain system processes will claim space and be shown as claimed System space, but will get released as the storage space is needed for other things. Also, sometimes it takes a while for the system to figure out how to allocate some kinds of storage. If you leave that window open for a long time, some of the "System" chunk will end up being moved to Photos or Documents, etc.
 
Do you use time machine?
Are "local backups" and "local snapshots" eating up your space?

Do you use Chrome?
That, too, is a "resource eater"...
