Coming from a mid-2014 MBP, I realize I am descending into dongle-land with my move to the new MBP. So what are the accessories one should get in prep for use with the 16" MBP.

1) SD Card dongle? Is there a good choice someone can suggest?
2) Magsafe replacement - how essential is this? I am used to the magsafe charger so far!

What else?

I got a HDMI and a VDA dongle, plus a USB-A adapter. Apart from that you should look at what devices you have and try to buy new connecting cables instead, e.g. micro-USB to USB-C instead of the USB-A cables you probably currently have.

I have never tried a magsafe replacement. Once my MBP 2016 was pulled from the table by someone tripping on the cable, no damage fortunately. What I do now, if I am in a busy environment, is to simply disconnect power and run on battery. What you need depends on your use case.

I use XQD cards for my Nikon D850 so I cannot advice on a SD card reader. You have not specified what you intend to use it for. High-end cameras generally have the ability to connect via WiFi or cable so you may not need a SD card reader.
