I have done it many times and every time it works fine for a week then starts moving slow like a windows computer with viruses.
 
Have you tried restarting it?

And how many jailbroken apps are you putting on in that week?

There are a ton of apps on cydia/rock that are memory intensive and not really optimized properly and therefore make your phone run terribly slow.

Thats the downside to jailbreaking - the apps that are on there can be poorly designed and have huge flaws when running with other apps.

I was just asking in general I had jailbroken my 3g months ago I only really had winterboard on it I don't think I'm doing it again.

Winterboard will kill the 3G. That's why apple didn't let 3G users to customize their home screen background.
 
Winterboard themes can slow your phone down, depending on what they are modifying.

If you experience a slow down with Winterboard installed, try changing themes, and see if you can narrow down the culprit.
