Trying to get a better understanding of advantages/disadvantages of setting up a Google Apps/Gmail account as an Exchange account vs IMAP.

Is there any difference if it's a Google Apps for business or Gmail account?

From what I understand having it set up as an Exchange account it uses less bandwidth so I get that. Aside from this I don't really know what the differences are.

I may be uninformed, but I feel that Gmail as an Exchange Account is superior in every way. As already mentioned, you get push email, contacts, calendar and task list.

The reason they don't have the default iPhone Gmail account as exchange is because Google has to pay licensing fees to Microsoft every time a user uses Exchange technology.

Number 1 reason I use exchange over imap is contacts syncing.

I'm using Exchange? Why?

Push and contacts syncing.

Thanks guys I guess I had it right :)
I thought I read somewhere that having it set up as an Exchange account had some limitations but I could be wrong.

It does not use less bandwidth. You're still transferring the same content. It's push so it's more efficient than pull.

Drawback to setting it up via ActiveSync is that deleted mail doesn't go to trash, IIRC. I think it just ends up archived.

I haven't been able to figure out how to set up a "send from different address" using exchange, only IMAP.

Notice how I worded that... "haven't been able to figure it out" but I am not sure if it's possible to do that "send from" thing with Exchange.

I have my own domain, but bounce all my mail to gmail to filter spam and all those good gmail things, but I like to send "from" that address and not the gmail address.

I had a problem with one of my accounts and the Google engineer I was in contact told me that using exchange does use less bandwidth.

Goto m.google.com/sync on safari on your iphone (not on a mac/pc) and enable the send mail as option.
