What are my chances of finding a 3GS in store later today?

probably your best shot is apple store, but there'll be a pretty good line. If not just get up early tomorrow morning.

most probably not, im 80% certain they wont but you never know. if you want drive by see if they have a few left but again im pretty sure they wont opening day theres always huge lines from like 7am

There's tons out there. Walked up to ATT at 10am, no lines & plenty of phones.

I had to go to an AT&T store to do an IMEI swap (bought on one line for discount, use on another line). They said they sold out in about an hour, all local AT&T corporate stores sold out by lunch. Apple store should have plenty though. Or you can try Walmart or Best Buy, I'm guessing a lot of people didn't realize they were even selling them.
