Not an app per se but SBSettings is a must. It lets you change brightness, sound, wifi, and SSH settings (and more) without ever leaving an app.

If u don't already have it get winterboard it is necessary for getting themes off of cydia. If you don't have winterboard you can't use themes off of cydia. It is how you select themes

Limera1n is fine, but I personally recommend waiting for redsn0w, as it has may more customization options.

Folder enhancer is the BEST! It opens up folders much quicker than stock and then the built in folders in folders works great. Now I have nothing on my springboard.. just an apps folder with a bunch of folders inside that. clean screen!
