I'm using the simple watch face right now with date in the middle. Other 4 complications that I use are..
Activity
Messages
Weather
Music

I mostly use the watch faces that allow for 4 complications. To me, complications are one of the features that make the Apple Watch so useful. What do you guys use?
 
Activity
Music
Overcast
Battery
Calendar

Having music and overcast as a complication allows me to do pretty much everything just via the clock face, I only seldom need to use the button to view all the apps and pick up one to open. And I tend not to use the dock too much, basically I want to use the Watch by tapping on the screen as much as possibile without using the physical buttons.
 
The most useful complications for me are as follows (no particular order):

Dark Sky
Battery
Activity
 
I vary it a little depending on the face, but generally:

Carrot Weather
Fantastical Calendar
Activity Rings
Due (Reminders) or Ticktick (my task list)

I have the Timer app on some faces, because I often use the timer (which I usually set with Hey Siri) but it's nice to see how much time is left on the complication.

On the Activity face I use weather, cardiogram and Lose-It
 
I tend to have:

Timer
Marcher (my own app, for steps)
third slot: various other ones, mostly security app, or stopwatch

Currently Weather in the large middle slot, but should probably go back to Dark Sky or Carrot there.

Top right: weather/temp
Top left: Workout, for quick access to Open Walk for my lunchtime walks
Bottom right: Power/battery meter
Bottom left: Upcoming calendar appointments

Music I drive from my phone home screen. Otherwise the Watch face & complications do everything I need them to do or have access to on a single screen.
