So what do you guys think? What are some good color combinations for a Gold iPhone 6s/6s Plus and an Apple Case? Saddle Brown and Midnight Blue were my original choices but now I'm sorta feeling the light colors to go with the white front.

I like your original choices. Unless you're In the Southern Hemisphere we are about to enter Fall and Winter so the darker cases are going to fit right in. And both of those colors are going to set off the gold of the home button ring very nicely.
Leather- saddle brown, brown, midnight blue, rose gray
Silicone- stone, midnight blue
Essentially for me neutral colors work best for gold. The pastel like ones or red and orange go well with silver or space gray. All my opinion of course
