Another idea is a Apple Watch 11 and SE3 in maroon like what was rumored by Apple Explained for the 15 Pro lineup and a Blue Titanium Apple Watch 11 and Ultra 3
Green or Sky Blue would be cool, though I'm simple and have always just gotten silver.
