What does count as a cycle in iOS when charging the iPhone?
If my phone is at 50% charge, and i charge it to 100%, does that count as 1 charging cycle, or does it count as 1 charging cycle when i charge it twice from 50% to 100%?

One charging cycle is 100% total charge. Could be 75-100 four times or 0-100 once.

Charging cycle is when you collectively charge your battery from zero to the designed capacity, a.k.a from 0% to 100%. So yeah, one charge cycle in your example is twice 50% to 100% charge.
