I just changed mine to just to the left of default (larger text) and so much stuff is more legible.

I set my apps to fill the screen (not full screen setting, but rather resized to fit the entire screen) so I'm not concerned about having/needing multiple windows visible at once. I use Expose for switching between apps.

Just wondering which setting you use, and why?

Just switched back to default, and edited some font sizes in apps, where available.

Some apps look better, but others are just too big for the distance one sits from the computer. It strains the eyes.

Nice to have options, though.
 
"More space" when I'm in serious work mode. Sometimes even smaller than that (the non-HiDPI setting which is not on display in Apple's system settings) because I know what the text on the panels say already, I just want to fit in more knobs, sliders and buttons.

"Default" whenever just surfing, reading or writing.

I also use the option directly to the left of default. The reason it's more legible and clear is because the UI is displayed in exactly half the resolution of the rendered display (Scaling resolution: 1280x800; Display resolution: 2560x1600). This results in native 2x Retina scaling - pixels appear twice as sharp as they are more dense. See here for more specific information from Apple's Developer guides.

Are you vision impaired, at all? Or do you just find it more aesthetically pleasing?

By the way, you should try resizing apps to take up the whole screen (not full screen mode) which makes things much more comfortable.
 
I use default on my M1 MBA because it equates to 1440 x 900 resolution, which is the same resolution I grew used to on my old 15-inch MacBook Pro (the first Retina model from 2012/13). It was nice when switching to a smaller laptop, that I could still keep the same screen real estate.

I am not impaired; I do simply just find it more pleasing aesthetically. To offset I have Safari automatically load pages at 85%, which fixes the issues with text and other UI elements seeming too large. Apps tend to remember scaling between instances, so I just have to zoom out a bit for new apps.
