I'm going to have Apple fix my 2011 MBP as part of their extended warranty program (https://www.apple.com/support/macbookpro-videoissues/).

Do I need to bring in anything besides the MBP? Do I need to bring in the charger?

Can I bring it in without the hard drive, for privacy's sake?

If they need it with the hard drive, will they ask me for my password too?

If you're so concerned about privacy just use FileVault. Nobody can crack through it. They won't ask for your password.

Well it's too late to do anything in terms of encryption, since the MBP won't boot up at all.

Just the MBP should be fine. I brought mine in for the same repair without my SSD. No problems.

Bring it in as is, with the hard drive, they'll be needing it.

You're likely neither important nor interesting enough for Apple to snoop through your stuff. They have other repairs waiting and no time to waste on things like that.
