I ran my storage up to 5gb pretty quickly with lots if pics and video. Do most of you pull them off of your phone and store on a computer or just delete the older ones as you go along with?
 
I'm assuming you're talking about the 5GB iCloud storage, I like recording a lot of videos and my back-up and restore process were taking to long, so I disabled iCloud from backing my Camera Roll.

I just plug in my phone every few days to transfer my videos to iPhoto.

Interesting. Do you put them anywhere else?
 
I store them on my computer. Media files are not meant to be stored in the capturing device (phone, digital camera). They are backup in my computer, which is back up to external drive.

They are easily moved to computer either through USB, or wirelessly with photosync.
