From the news article released recently the iPad 2 is still technically in production, although at a much slower pace. It'll still be for sale until the next iPad revision later this year. After that the iPad 2 will be dropped from the current lineup.
The original iPad Mini, though, is harder to predict. Apple could definitely keep it around and sell it for that $199 price point as the entry level iPad and discontinue the iPad Mini Retina in place of a faster model much like they did with the iPhone 5<5S. The iPhone 4S is practically guaranteed to get iOS 8, and considering the original iPad Mini is sporting the same hardware, will receive the update as well and would allow it to continue to be sold.
