mine cost 499+ and I use it for phone calls, text messaging, email, ipod music and video, youtube, ical, notes, photos, camera, maps (a lot) web browser, and much more
Well, I use my iPhone for everything: As a phone(obviously, lol), and it's replaced my previous 16GB iPod Touch(which I've sold on ebay).
Sure, I had web and email capabilities on my previous phone(Sony Ericsson K770i), but they were such a chore to use, that I used those functions very rarely, if ever, after a few attmpts.
Ok, so the camera has no additional functions(yet) and it's only 2MP, but it's still pretty decent for quick snapping.

Absolutely everything. It's removed the need for a laptop in my bag all the time.
Even though it's just GPRS/EDGE most of the time I still manage ok.

I use mobile banking, UPS tracking, MacRumors (of course), UrbankickOakland.com (workout schedule), berkeley.edu (alma mater and CalMail website), Calbears.com (Cal's official athletic website), maps (everyday that I'm on the road), weather (everyday), youTube (almost everyday), IMDb for movie picks, Netflix, AppleInsider, FoodNetwork, BART (Bay Area Rapid Transit Train), ESPN, Kiowa Casino, SFSU.edu (other school and email website), Gmail, KRON4, KTVU and Powwows.com, and a bunch more.

Kind of funny because sometimes the phone rings and it scares me. I use the phone the least. I only really talk to my wife, my Mom and my Sister. Never been much of a talker. i used to leave my phone at home if I was just going out for a few hours but now I can check traffic, store hours get Red Sox scores and surf the web when my wife drags me along to go fabric shopping.
Best piece of tech I ever bought!
