What DOES iPhone backup contain? (ie: what can I restore/what cannot?)

Hi--new member coming in and have had problems restoring an iPhone 2G. I'm on 2.2.1 and wanted to go to 3.1.3 and CAN do so but... brand new phone/user at that point. Can't restore my backups properly. Some data yes, some data no.

So I'm about to get into a 3gs now and basically wondering if I'm going to have to start from scratch with certain things on that phone.

Anyone else have problems with restores? Anyone else tried to put 'old data' onto a 'new phone' or one that has gone with updates? Certainly YES...otherwise WTF?
