We hae several Apple TV's & on most of them, we can control the TV (Turn it on/off, adjust the volume, etc) through the Apple TV, but one older TV doesn't work like that & I need to use the TV's remote. We're looking to replace that TV, but what feature do I need to make sure the TV has in order to allow it to be controlled by the Apple TV remote?

HDMI CEC which most TVs have these day, but depending on the particular brand or model of tv the reliability of that function in conjunction with the AppleTV may differ between TVs.
 
BTW HDMI CEC has different names in each manufacturers' implementation (LG calls it Simplink, Sony calls it BraviaSync, Samsung - Anynet+) and it's often off by default. A TV should follow the basic command set and be cross-brand compatible, however manufacturers often get carried away and implement CEC in a way that makes interoperation close to impossible. If there are any "advanced" options in the CEC implementation in the TV's menu, I'd suggest setting everything to "auto".
