You're not. Just press the alt-key when clicking on restore. But you might want to keep a copy of the 1.0.2. .ipsw file in case Apple deletes it.

You can select the firmware you want to install, as long as it's a newer version than already installed (no downgrades). I only read about it, didn't test it.

From what you remember would it work like this: I'd have to press alt when the phone is retstoring and then select the folder with the 1.0.2 firmware in it? I've downloaded the 1.0.2 firmware from the iPhone Unlock Wiki page in preparation.
