What folders to omit from Time Machine backups?

I'm new to the Mac....

I'm currently excluding:
- Downloads
- iTunes podcasts
- iTunes movie rentals

I'd like help finding the temp folders. Can anyone help me locate these?

What other folders would you suggest that I omit?

Also, is it possible to delete files/folders from the backup?
