On the iPhone voice commands and dictation etc. is done through Siri. You set up Siri on your iPhone and then it will work the same whether you have the Airpods in or not. So if you have set your iPhone to listen for "hey siri" then this just keeps working with Airpods in, but your voice (the mic) and the output are routed through your Airpods instead. So if a call comes in Siri will announce it the same way as it does on the iPhone and will ask if you want to accept the call, then you say yes or no.

Essentially there aren't many Airpods settings because it's just an extension of your iPhone in that it routes input and output through the Airpods. The Airpods themselves have little settings, you can find them through your iPhone main settings, tapping on the Airpods entry that appears in your settings main menu whenever you take them out of the case.

One press on the Airpods (un)mutes the mic or pauses/plays music, double press accepts/ends calls, and holding changes ANC modes (these don't have ANC though).

Siri doesn't work too well on these to be honest, or you gotta get used to it at least. I don't think Siri acknowledges when you call it up so you gotta just continue giving the voice command.

Siri commands are part of the iPhone user manual, you can find it here and choose the applicable iOS version in the dropdown: https://support.apple.com/guide/iphone/use-siri-iph83aad8922/ios
