I could've sworn that in iOS 6 we had the option to bold and italicize our words it notes and many other applications, but now in iOS 7, I've noticed that no such option exists anymore. And my going crazy question or am I missing something here?

As an aside, I have noticed that when copying and pasting entire documents from the notes app into the pages app, not all of the special formatting transfers alongside with either/or application. Is there a setting lying around or is that too just the way it is?

You could format your text in Mail starting with iOS 6 but it was never possible in Notes.
 
If you add font formatting in OSX notes it will sync over to iOS but you could never directly do the formatting in iOS.
 
Isnt that just mind boggeling? I hope they add this in 7.1 before its released
That it hasn't been there for 7 versions of iOS? Perhaps...but certainly nothing new or surprising it would seem.
