What Happens in a "Restore"

What will happen if I do a Restore? My iphone 4 is backed up, so I suppose my apps and music will be OK. But what about things like my Contacts and Notes? Will they also be preserved

The apps and music are synced to your computer. They’re not in the backup.

Last time I restored, the backup remembered my app folders, etc.
It's possible the backup will also include the apps without one having to manually select. However, I don't know if that's the case for apps deleted on the sync computer.
