I've been considering getting a larger HDD and maybe installing Windows 10 to play some Windows only games. I'm not annoy gamer but there are some only available on Windows and my mini should make the cut.

My concern is, what kind of hassle will I have if I upgrade my Mac to a newer model, either a mini or MBP, and use the same Windows license, obviously removing it from the current one.

I had issues with XP but was able to call into Microsoft to get it sorted. It was easy, but that was in 2008. Is this still an option?
 
If you bought the full retail version of Windows 10 then you'll be able to use the phone option to reinstall on new hardware just like with previous versions of Windows.
If you used the free Windows 10 upgrade from either Windows 7 or Windows 8 then you can only ever reinstall on the same hardware. You won't even be given the option of calling in to Microsoft.
