I got my iphone 3g after the 2.21 update came out, so I have never had to update my iphone before. Right now it is jailbroken, so my question is how will I upgrade to 3.0 when its released? Is there anything special I need to do since my iphone is jailbroken right now?

Obviously, I will lose all my my apps obtained by jailbreaking, but will the rest of the stuff on my iphone remain such as apps, music, phone book, and my texts?

You can upgrade to 3.0 and keep all your non-jailbroken stuff, but it will become unjailbroken. You'll have to wait for the jailbreak for 3.0 to come out for 3.0 with jailbreak apps. But you'll have everything else.
 
You will lose all your JBd apps, but your legit apps and other settings will remain. Youll just have to download the update by clicking update in itunes and itll work its magic!
