What hardware I need to upgrade my early 2008 Mac pro 3.1 to run Monterey.

What GPU are you running?
For running Monterey, especially while screen recording, a GPU that supports the Metal API is a necessity.
Do note though that compared to the 4,1/5,1 Mac Pro, modern GPU options for the 3,1 are extremely limited, given that the fastest card you can run is the RX 580 IIRC.
