Basically I'm getting a new one soon but this one (jailbroken iOS 4.2.1) is EXTREMELY SLOW. So i will live without the jailbreak for a few months but which iOS version is best for this on an iPhone 3G?

You can't downgrade to a lower OS version unless you have SHSH blobs saved for a previous OS version as Apple is no longer signing previous versions of iOS.
 
3.1.3 would be the best option for you.

With a 3G yes, the OP can. The 3G can be downgraded to any firmware, 3.1.3 or later.
