Some real talk here (I'm not a tech Youtuber):

For me looking at the iPhone 12 mini at the Apple store raised the question "what is a smartphone"? I'm still on my iPhone 6S, and the mini has a considerably narrower screen than the 6S. The mini is very cute and pocketable, but watching videos sure would be a lot less enjoyable, because the effective video size is even smaller than on the 6S.. watching Youtube, Netflix, IGTV,... on the mini would still be possible, but more like just for quick previews. Is the mini more of a messaging/social device then? I don't think so, because writing on the narrow, small keyboard is no fun either.

Therefore the mini seems to be a device for people who
  • like to stay reachable (much like pager),
  • do short tasks like online banking on the go,
  • and being able to take great snapshot photos
with a very small, light, pocketable device.

In Europe the entry level 64GB mini costs Euro 800 = US-Dollar 968, throw in a screen protector and charging brick, it's a $ 1000 phone (add another $226 for Apple Care+?). Hard sell in my opinion. What do you think?

People have used the original iPhone, 3G, 4/4S, and 5/5S over many years for all kinds of things ranging from calls, to messaging, to email, to browsing, to apps, to videos, etc. and were just fine. At this point it's really more down to preference than capability.

The standard sized iPhone 12 is the phone that seems to fit your requirements. You can’t go wrong with it.

The Mini active screen is half a mm narrower measured side by side with a caliper. Total screen area is higher on the Mini than my 6S, but of course source aspect ratio will affect video playback area. The old standard 4:3 might actually show more screen area in the 6S. 16:9, no way!
