The Seagate website says that there is a 5-year warranty on a certain hard drive I am trying to buy. But on amazon, macsales, etc. many say the warranty is 3 years. Some say 3 and some say 5 for the same product. How can this be?

Some sellers say 5 years. Thats why im so confused about this.

Then they give 5 years as well. Seller can give whatever they want, it's their headache, not Seagate's then. Some resellers give Macs 2-year warranty but it only applies to that specific vendor, Apple only gives one year. Reseller doesn't even have to give warranty, they can give 1 day if they want.
