The iPhone 8 shows Apple is interested in keeping an iPhone at that price point. What will $699/$799 new iPhones look like going forward?

They are phones that age as the newer iPhones supersede. Eventually, like all iPhone models, they will be phased out of the line up and the next iPhone takes its place. The iPhone 7 and 8 will likely be discounted as usual next year and move down the line when the 2018 iPhones are announced.
 
The current state of performance doesn't require me to buy a new release phone any longer. I'm now happy with one or two year old hardware at a really great price.

The point is that Apple made a new model (iPhone 8) at the old high end price point and introduced a new higher price point phone (iPhone X). Do we think Apple will make another "new" iPhone in 2018 at the $699/$799 price or will it just be a discounted iPhone X?

I was just commenting on the degradation of pricing with iPhones. I don't see Apple manufacturing another iPhone similar to the iPhone 8. The iPhone 7 and 8 will be in the line up for another year. But the SE will be the only other iPhone to retain the cheaper entry level price point.
 
Tepid response to the iPhone 8 is a signal Apple needs more innovation at the $699/$799 price point. Future models will likely have larger displays and higher PPI.

I don't think the X will move to the $699/$799 slot. That's where the rumored 6" TFT LCD model comes into play.
