I'm new to developing for the Apple watch and I really don't want to send it back to apple. Is there a way via Xcode etc? I don't feel like rooting all through the internet. Thanks to all!

Can't be done. Your stuck with OS 3 unless you can get them to swap it out which probably won't happen
The OP can still get them to swap it out as he's apparently a paid developer. It's the only way as you pointed out.
