What is the top config you can pick up in the Flagship NYC store TODAY?

If you go to the flagship nyc apple store, what is the top configuration you can pick up in the store today without waiting?

Do they go above 8gb memory?

Go to the Apple website, select the New York store, and try different configurations. You should be doing your own work and not asking others to do what is easy on the Apple website.

I suspect like most stores, the 16 gig and 1TB is generally in stock. Any larger configurations in memory or storage requires shipping.

All the stores carry the 16GB model with the 1TB SSD. The 5th Avenue store has them for pickup. Like said above though you can look this up on your own and it takes about 30 seconds to do so.
