Personally my Mac Mini late 2012 (i7-3615QM) with Samsung SSD 860 EVO 1TB (SATA III) runs macOS Catalina 10.15.7 with a boot up time of 17 seconds and a switch off time of 3 seconds.
What is your boot up time?

I'm curious about recent model with NVMe PCIe storage.

Hmmm...MBP, mid 2012(bought in 2015), running Mojave, mechanical HD. Boot time 3 to 4 minutes. Shutdown about 2 minutes. Been like that since new through various OS upgrades.

My late 2014 Mini takes 2-3 minutes to boot up, and a minute or so to shut down. I don't wait for the shut down. I just turn off the monitor and walk away. Tech Tool Pro has been telling me that the Mac is sick for at least two years, but it runs.
