I will probably JB my iPad. Just asking to see if it would worth it for me or not.
 
Infinidock
SNES Emulator ($4.99) - I enjoy it because I can sync it with my wii controller
Vertical page scrolling
YourTube HD - download YouTube videos directly on the iPad to view without a wifi or 3G connection ($4.99)
 
Honestly, my iPhone has a ton of tweaks. The only tweaks my iPad really has are the Infini(Folder/Dock) ones. There is so much room on those screens that it's ridiculous to be limited
 
The ones installed on my iPad are:

vWallpaper with a video. This is a video of my iPad before Infinidock.
Infinidock so I have nothing on springboard so you can see the whole video.
BytaFont with Hand of Sean installed system wide.
Safari Download Manager so I can download files if I need to.
iFile to browse files on the phone.
Attachment Saver for the Mail app.
Pull to refresh for the Mail app as well.
NoSpot to remove Spotlight search.
FastCopy so there's no delay in copying/pasting.

The virtual memory hack...

...which no longer works.

I had to take my laptop with me to several meetings this week because the virtual memory hack no longer works, making the iPad virtually useless to me in the office.

Either going to try and downgrade back to 3.2.1, or I'm going to find a kid to give this pos toy to.
 
Springtomize is one of my favorite new tweaks. It combines a lot of the other ones such as no page dots, fakeclockup, hide labels, disable spotlight and many others. just an fyi the tweak is very very new and can be kinda buggy, so if you get freaked by the sb crashes stay away for a bit but dev does a GREAT job of addressing bugs and adding requests.

Pandora hack like Map said is awesome.

Yourtube- download and watch youtube videos offline.

iFile-root file viewer.

OpenNotfier- adds notifications to status bar.

FullScreen for iPad- makes Safari full screen and also adds gestures.
 
after the power/lock button jammed on my 3rd gen touch, i always put QuickLock on every iDevice.

so instead of having to push the lock button, you just have to push a lock icon on the springboard.
