Hello, I currently have a MBPr, and 256GB of SSD space is NOT enough for me :)( ).

I will be using my Mac for:
-Unity Programming
-Xcode Programming
-Blender
-Photoshop
-Minecraft
-TDU2 Gaming
-Running Windows XP + Ubuntu Linux + Mac OS X at the same time
-Screen recording & some games
-Video editing w/ Final Cut Pro X, & Motion

What should I get?

What should I get?

You could go with a cMBP to make use of a large HD (at the price of a non-retina display and an old design), but running Windows XP, Ubuntu and OS X at the same time would be too much for a slow HD. The speed of an SSD would make a lot of difference for three operating systems running at the same time.

You have basically two options here: (i) stick with your current model, and save some files on a pen drive, or an external HD; or (ii) buy another model with 512 or 768 GB of SSD space. I wouldn't go back to HDs.
 
build a custom made Desktop Workstation like i did: 2 Xeon Processors, 32GB of ram ( could easy upgrade to 64GB of ram ) 4x 512GB SSD in raid and 10TB storage in NAS :) but if u look for a laptop i would suggest ya workstation class laptop or cMBP if u want storage or buy a external HDD :) or ya could go for the cheapest mac mini and upgrade your self to 16GB of ram :)
