What information about you do apps have access to? Your phone number? All email addresses you have accounts for in Mail? Any browser cookies? The contents of mail, SMS and call logs? Your device's UDID, MAC address or some other unique identifier?

I was shocked to learn that it is only in iOS 6 that Apple requires that apps ask for permission before accessing contacts, calendars, reminders and photos. Does that mean apps could do whatever they wanted with that data in previous versions? What information do apps still have free access to?

Is it possible to prevent certain apps from accessing the Internet, at least, so that even if they are interacting with your personal information, the information can't be sent back to the developers or third party tracking services?
