I have an old Quadra 610 which I don't need, not even as a word-processor or email reader. Shall I chuck it out or does anyone have a better idea?

You should definitely play Spectre with it- a great game gone by the wayside.

Seriously, I think there is a decent market for old macs- maybe put it up on ebay?
 
If you have older Macs without ethernet, you can use IPNetRouter on the 610 to serve an internet connection them via Appletalk.

Otherwise, I'd donate it. If you're in Socal, donate it to me. ;)
 
Offer a service?

I have a stack of floppies with pictures and documents that I'd love to be able to retrieve and put onto a CD. I had a Quadra 610 when I compiled these floppies originally. I'm sure there's other folks who have info on floppies that they'd like to have archived on CD...

Maybe start a business?
