For me, I use Ocean Colour Scene “Get Blown Away” or Killers “My Own Soul’s Warning” but I’m a simple man. Have no interest in bass-driven music or modern formulaic nonsense.
 
I've been using the Broadway version of Circle of Life for years. Also Classical Music pieces. Japanese Enka pieces where the singer goes into sustained high notes. Some Japanese pop songs by bad singers -- the better the earphones, the more I can hear how bad the singers are. ;)
 
I was trying to find a user here who posted their playlist that contained a number of bass-focused & other type tracks to test the original AirPods Pro back in the day, but I can’t find them. I knew I’d regret deleting that playlist as it was a good workout for the buds..

As for tracks I’d recommend, try some Sigur Ros for orchestral & vocal sounds, & Tool for heavier instrumental separation. Also Jimmy Eat World have a track called Invented that builds to a full blown rock crescendo that may be a decent test.
